Avocado toast with scrambled eggs and smoked salmon

In a saucepan heat up some avocado oil and crack the eggs inside.
Avocado oil – 1tsp, eggs – 2

Whisk constantly and when you notice the eggs are starting to stick to the bottom of the saucepan, remove from the heat for a couple of seconds, but don’t stop whisking and put it back again in a few seconds. Repeat this various times until the eggs have reached a pure consistency.

Toast the bread and spread the eggs over.
Bread – 1 slice

Peel the avocado using a spoon and cut it in very thin slices. Then start pressing it with your hands from both sides, but at the same time move them in the opposite directions. Now you have a thin string of avocado slices which is very easy to manipulate. Make an “S” shape and put it on over the eggs using a knife or spatula.
Avocado – 1/2

Trim the salmon, cut the sun-dried tomatoes and chives, add to the toast and sprinkle with some capers.
Smoked salmon – 40 g, sun dried tomatoes – 10 g, chives – 5 g, capers – 10 g
