Banana pancakes with bacon and avocado

Instructions

Peel the banana and mash it with a fork.
Banana – 1

In a bowl mix the eggs, ground almonds, coconut yoghurt, a few drops of vanilla extract, a pinch of salt and the banana.
Eggs – 2, ground almonds – 1 Tbsp, coconut yoghurt – 1 Tbsp, vanilla extract, salt

In a frying pan heat up the coconut oil and then using a spoon start making pancakes, distributing the mixture in four places in the pan. Add around three spoons for each pancake and repeat that until you use all the mixture. Let the pancakes cook for 2-3 minutes on each side.
Coconut oil – 1 tsp

When you are done with the pancakes cook the bacon in the same pan for 2-3 minutes.
Bacon – 50 g

Start stacking them, alternating layers of pancakes and layers of bacon.

Peel the avocado and cut it into very thin slices. Arrange them around your stack of pancakes.
Avocado – 1/2

Pour the maple syrup on top of your pancake tower.
Maple – 2 Tbsp
