Preheat the oven to 200°C.
In a bowl mix the soy sauce, balsamic vinegar, maple syrup, sesame oil and the ginger.
Soy sauce – 1 Tbsp, balsamic vinegar – 1 Tbsp, maple syrup – 1 Tbsp, Sesame oil – 1 Tbsp, Ginger – ½ tsp
Add the prawns and leave aside to marinate.
Prawns – 100g
Break the cauliflower into small pieces and season well with the cumin, curry, salt, black pepper and avocado oil.
Cauliflower – 150 g, cumin – 1 tsp, curry – 1 tsp, avocado oil – 1 Tbsp, salt , black pepper
Mix and bake for 20 minutes.
In a frying pan cook the marinated prawns for 5 minutes. Sprinkle with some sesame seeds on top and leave aside.
Sesame seeds – 1 Tbsp
Wash and tear the kale into smaller pieces. Season with salt and put it in the oven with the cauliflower and bake for 5 minutes.
Kale – 20 g
Then you can start plating. First add the rocket and the nori sheet but tear it roughly in small pieces. Then add the cauliflower, kale and prawns. Before serving, sprinkle the capers and some pomegranate seeds.
Rocket – 20 g, nori sheet – 1/2, capers – 1 Tbsp, pomegranate seeds – 1 Tbsp
